Since the challenges atoxicsparkle [1] has been running in her wonderful Beauty Product Junkies [2] group have been so fun, it seemed like a good idea to try out a recipe challenge!

Since it's really starting to warm up (in most places), let's start out with a challenge for light and cold recipes. Let's see your best salads, pastas and generally cucumber-cool dishes, ladies! Please note that they need NOT include cucumbers, but they should be cool *as* cucumbers.
