And the winner is...Chicken Fettucine Alfredo! Thank you to everyone who voted and don't worry, I'll try and post all the recipes that you guys sounded really interested in. Maybe today if you're good. 
This recipe is a classic and there's are often the best, and hopefully easiest, to convert to being made in a slow cooker. You probably never really thought about making this in a slow cooker, but after all, why not? It looks pretty easy and ultimately delicious after simmering all day long...

Slow Cooker Chicken Fettucine Alfredo
From Pillsbury Slow Cooker Recipes
Prep Time: 25 minutes
Makes about 5 servings.
Ingredients
1 1/4 lb. boneless skiness chicken thighs, cut into 3/4 inch pieces
1 4.5-oz jar sliced mushrooms, drained
1/2 cup roasted red bell pepper strips (from a jar)
2 tablespoons dry sherry, if desired
1 16-oz jar Alfredo sauce
3 cups frozen cut broccoli
10 oz uncooked fettucine
2 tablespoons shredded fresh Parmesan cheese
Directions
1. In a 3 to 4 quart slow cooker, layer chicken thighs, mushrooms, and roasted pepper strips. Drizzle with sherry. Spoon Alfredo sauce on top.
2. Cover; cook on low setting for 5 to 6 hours.
3. About 25 minutes before serving, rinse broccoli with warm water to thaw, drain well. Add broccoli to chicken mixture. Increase heat setting to high. Cover and cook an additional 20 minutes. Meanwhile, cook fettucine according to package directions. Drain.
4. Stir cooked fettucine into chicken mixture. Sprinkle with Parmesan Cheese and stir.

Hmmmm. Well, I'd probably omit the mushrooms and add in more peppers and broccoli. Delicious. What about you - any variations you'd do?
