Due to something [1], wild salmon has been scarce this summer. While I may have some good recipes for sardines coming at you, I was so ready for the salmon season, that I've been experimenting with Real Food's [2] tree hugger friendly, organic, etc., farmed salmon.
Tonight, I wanted something quick and satisfying that would also be a great leftover for a 4:30 am breakfast for my ride [3] tomorrow.
The key to this recipe is great ingredients, fresh salmon, good sea salt, fresh milled pepper and a hot grill.
Simple Grilled Salmon (Protein dish for 4):
2 10-12 oz. filets of Scottish Farmed Salmon with skin on
Fresh Milled Pepper
Coarse Seas Salt
Sesame Seeds
Any kind of cooking oil
Rinse salmon in cold water and pat dry with paper towel.
Put in prep dish and season liberally with Salt and Pepper. Sprinkle sesame seeds onto skin side of salmon filet.
Soak paper towel in cooking oil and use to rub down a pre-heated grill at medium, direct heat.
Place salmon skin down on grill, sprinkle flesh side with sesame seeds and cover at 400-450 for 5 min.
When filet has started to crisp, skin should pull away easily.
Flip.
Finish grilling flesh side down for 4 more min.
As with cooking any steak like meat, you can tell when it is done by pushing on the filet with your bare fingers and gauging how well done the meat is by how firm it is. Err on the less cooked side for good fresh salmon.
Tonight, Heidi and I had with leftover boiled cauliflower, leftover brown Basmati rice, tomato with homegrown basil and a Boston leaf lettuce salad with bell peppers. Pretty damn healthy, eh? I swear it aint always that way...and we had a nice Pinot Grigio with it.
