Regarding the water bottle comment, I know when I travel I use bottled water and I'm an environmentalist too. Even in the U.S. you will come across different water quality in different cities and you don't want to get sick because your body is exposed to new bacteria. I would especially follow this rule when travelling outside the US, since I can't vouch for the level of water treatment or quality.

I'm both an environmental scientist and an environmental engineer (I design water/wastewater treatment plants and do research in the field). I abhor plastic water bottles, but if my choice is to drink the local water in a foreign city or drink from a water bottle, I'm going to drink from the water bottle.
