This is a great dish for an Easter brunch where ham is making the main meat debut. I came up with this recipe during the holidays when I was menu planning and trying to avoid the plain and often boring ol' mashed potato side dish. I love potatoes and can't quite live without the carbs, but I wanted to have something different that complimented any meat main. This dish, scalloped potatoes with smoked gouda cheese and sauteed pancetta with shallots is the perfect compliment to any menu. It's Delicious!!
