Squash and Quinoa Chili

 

Chili is a fantastic way to warm up on a cold winter day. However, many chili recipes are packed with calories, fat and sodium. This vegan chili uses fresh squash, quinoa and black beans to create an incredibly filling and tasty meal that is also light, healthy and packed with vitamins. Best of all you can make up a huge batch in 35 minutes! Perfect for lunch, dinner or while watching football.

Ingredients:

1 tbsp extra virgin olive oil

2 cloves of garlic, minced

1 medium onion, diced

1 jalepeno, seeded and diced

2 medium delicata squash, washed and seeded

1 cup of quinoa, rinsed

4 cup low sodium vegetable broth

12 oz tomato puree or crushed tomatoes

1 tsp cumin

1 tsp chili powder

1 tsp chipotle chili powder

1 tsp dried cilantro

1 cup water

1 cup dry (or 2 15oz cans) black beans, rinsed
