Sugar Cut-Out Cookies

Ingredients

  1. 2 1/2 cups all-purpose flour
    3/4 teaspoon baking powder
    1/4 teaspoon sea salt
    1 cup unsalted butter, cold
    3/4 cup sugar
    2 eggs, at room temperature
    1 teaspoon vanilla extract
    Royal icing, for decorating
    Sanding sugar, for decorating

Directions

  1. Preheat oven to 350°F. Sift flour, baking powder, and sea salt together. Set aside.
  2. Using an electric mixer fitted with a paddle attachment, cream cold butter and sugar together on medium speed until smooth and light in color. This mixture should appear fluffy. Scrape down bowl with a rubber spatula. Continue to mix butter and sugar for 30 seconds, add eggs and vanilla extract, and cream for an additional 2 minutes. Scrape down bowl with a rubber spatula. With mixer on low speed, gradually add in the flour mixture, and mix until dough just comes together.
  3. Turn out dough on a lightly floured surface, and knead gently to completely combine the dough. Flatten into a round parcel, and wrap with cling film. Refrigerate for at least 1 hour, then roll dough to a 1/4-inch thickness. Cut into desired shapes, and bake for 12 to 15 minutes based on the size of the cookie cutouts. Allow to cool before decorating with royal icing and sanding sugar.
