Memorial Day gave many of our favorite stars one extra day to enjoy Summer activities on the beach and with friends! Producer Joel Silver's Malibu bash brought out plenty of A-listers, but many other celebrities opted to spend the long weekend with family. Click through to see what everyone was up to!

Jessica Simpson stripped off her many layers to go through security at LAX today. She arrived at the airport wearing a hat, scarf, and sunglasses, and cracked a smile as she waited in line. Jessica is headed out of town again after just a few days back in LA following her most recent trip to NYC. When home in California, Jessica shared a lunch date with her sister, Ashlee, and mom, Tina, and while the Simpson girls were busy on the West Coast, Joe Simpson and Jessica's fiancé, Eric Johnson, had some fun of their own in Scotland. Joe and Eric apparently went golfing overseas, leaving Jessica and the rest of the crew home to enjoy their three-day break. Jessica wasn't spotted with the many other celebrities partying on Memorial Day, but she did have a sleepover with her adorable godson to kick off the long weekend.

Lauren Conrad lit up the cover of Lucky's July issue in leather shorts and a blazer. She posed for the magazine in looks from her Paper Crown collection, which will hit stores this Fall. LC's juggling her latest design work with her line for Kohl's, her new website called The Beauty Department, and even a book club. She's also still filming her reality TV show even though MTV passed on the project earlier this year. LC opened up about her relationship with the network, her motivation to be on The Hills, and also shared her Summer essentials — here's more of what Lauren Conrad said in Lucky:

• On hating the gym: "I'm just not a fan of the gym. In fact, I hate it. I understand loving the feeling you get after working out all those endorphins. But going there? It's the worst."
• On why she did The Hills: "I never wanted to end up in entertainment; that wasn't the goal. I was doing the show to end up in fashion. But I'm totally aware that without The Hills, I wouldn't be where I am."
• On MTV not picking up her show: "It didn't feel like a perfect fit. It's difficult to compete with all the Jersey Shore type shows out there. Besides, there weren't any scenes of me getting drunk or fighting, so what's the point?"
