1/4 c raw buckwheat groats, grind in coffee/spice grinder to flour-like consistency
1/4 c soy milk
1/4 tsp cinnamon
1/4 tsp spice mix (ginger, cinnamon, pumpkin)
1/2 small apple, peeled and finely diced
Start Autumn out right with these tasty and healthy pancakes. These pancakes are vegan and gluten-free, but feel free to sub in any flour or milk that you prefer. Serves one.
Mix buckwheat grouts and soy milk with a whisk. If batter seems too dry, add in one additional tablespoon soy milk. Add your spices and mix well, and then fold in apples. Heat a small pan and drop in 1.5 tablespoons of the batter. Cook for one minute until bubbles form, flip and cook for another 30-45 seconds. Makes 4 small pancakes.
