Winter Warm-Up: Black and White Bean Soup With Sweet Potatoes

Old man Winter has blown in and brought with him an insatiable desire for warm, savory soups. This black and white bean soup with sweet potatoes is a twist on the classic black bean soup recipe, and it's under 300 calories a bowl.

You'll be amazed at how much protein and fiber is in one serving.

Black and White Bean Soup With Sweet Potatoes

Ingredients

1 tablespoon olive oil
1 onion, diced
1 teaspoon minced garlic
3/4 teaspoon ground coriander
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
4 cups veggie broth
1 can black beans, rinsed and drained
1 can navy beans, rinsed and drained
2 medium sweet potatoes, peeled and diced
2 tablespoons fresh lime juice

Directions

  1. Heat the oil in a pan over medium heat. Add the chopped onions, cooking for five to 10 minutes or until they're soft.
  2. Add the coriander, cumin, salt, and pepper, mixing for 30 seconds. Pour in the veggie broth, beans, and diced sweet potatoes. Bring to a boil and then simmer, uncovered, for 20 to 30 minutes, or until the potatoes are tender.
  3. Set aside three cups of the cooked beans and sweet potatoes. Puree the rest of the soup with a hand blender. Return the reserved beans and potatoes back to the soup pot, cooking for another 10 minutes. Add the lime juice. Season with salt and pepper as desired.

Makes six servings.

The recipe never mentions when to add the garlic, I added it with the potatoes and veggie broth.

Also I would change the verbiage to "pot" instead of "pan" bcause I started with a pan and realized I wouldn't be able to add 4 cups of veggie broth to it.

Other than that the recipe it so easy and the soup is DELICIOUS!
