A Reader Recipe: Bran Flax Muffins

Get your daily fiber fix with this bran muffin recipe from FitSugar reader For the Love of Fiber. She shared it with us in our Healthy Recipe group in the Fit Community.

These fiberlicious muffins are inspired by a Bob's Red Mill recipe, but with a few tweaks. They are moist, delicious, and best of all —  filling! These nutrient-dense powerhouses resemble a Morning Glory Muffin, minus the glory to your midsection.

Ingredients
Use organic ingredients when possible

* good source of fiber

  • 1 ½ cups whole-wheat flour *
  • ¾ cup flaxseed meal *
  • ¾ cup oat bran *
  • ½ cup maple syrup
  • 2 tsp. aluminum-free baking soda
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 ½ cups shredded carrots *
  • 2 apples, peeled and shredded *
  • ½ cup raisins *
  • 1 cup walnuts, chopped *
  • ½ cup whole milk
  • ¼ cup water
  • 2 eggs, beaten
  • 1 tsp. real vanilla extract

Prep

1. Preheat oven to 350ºF. Grease a dozen-sized muffin tin with virgin coconut oil or butter. Set aside.

2. Mix together flour, flaxseed meal, oat bran, maple syrup, baking soda, baking powder, and cinnamon in a large bowl. Stir in carrots, apples, raisins, and nuts.

3. Combine milk, water, beaten eggs, and vanilla. Pour liquid ingredients into dry ingredients. Stir until moistened. Do not overmix. Fill the muffin tin. Bake 15 to 20 minutes.
