This sweet take on quinoa is perfect for breakfast or even a midmorning snack. It's even better with a dollop of nut butter and a cup of tea! You won't believe how easy it is to make this protein-packed treat.

Cinnamon Quinoa Bake

Ingredients

  1. 2 1/2 cups quinoa, cooked and cooled
  2. 4 eggs, beaten
  3. 1/3 cup vanilla soy milk
  4. 1/3 cup maple syrup (optional)
  5. 1 teaspoon vanilla extract
  6. 1 tablespoon cinnamon

Directions

  1. Preheat the oven to 375ºF and place the quinoa in a large mixing bowl. Line an 8-by-8-inch baking pan with lightly greased parchment.
  2. In a small bowl, whisk together eggs, soy milk, vanilla extract, and cinnamon until thoroughly combined. Add maple syrup (if using) and whisk.
  3. Add egg mixture to cooked and cooled quinoa. Stir with a large spoon to combine. Pour into the parchment-lined baking dish and spread it around to ensure that it’s even.
  4. Bake for 25 to 30 minutes until set and golden.
  5. Using parchment, remove bake from pan as soon as possible so that it doesn’t steam.
  6. Cool completely and cut into squares. Serve with a dollop of nut butter.

I think I totally screwed up. Did the uncooked 2.5 cups of quinoa in the bowl (after cooking. Needless to say I had a ton of quinoa. I doubled up pretty much all ingredients and used almond milk and brown sugar instead of soy. & maple. I hope it's not a waste! I'm going to try it again with the correct ratio. Side note: I used 2 bananas for egg substitutes because I'm kinda not into eggs that much. Total eggs for my giant recipe was 4 & 2 large bananas.

Just made these with a few changes: Honey instead of maple syrup Added: 1/2 cup all natural peanut butter 1 Cup of whole oats topped w/ coconut, toasted blanched almonds & choc. chips baked in a larger, shallow pan (totally forgot the milk - but, I would have used coconut or almond, not soy) I really like them, but not sure they would pass the family (not so much lovers of "healthy" food) test....

I added fresh fruit to the mix and it took nearly an hour to bake! Was it just the excess liquid from the fruit or could I have done something else wrong?

Family loved this with a few\u00a0changes. Used almond milk;\u00a0used 1/4 C.\u00a0maple sugar; added raisins and slivered almonds and\u00a0used more cinnamon.\u00a0\u00a0 Next time I will try adding dried apricots instead of raisins.

Please note: This recipe is written INCORRECTLY!!!! There is a BIG difference between 2 1/2 cups quinoa, cooked and 2 1/2 cups cooked quinoa! I cooked up \u00a02 1/2 cups quinoa, as directed, but as I was adding it to the eggs the ratio seemed really wrong. I checked the original source for this recipe and it is indeed supposed to be 2 1/2 cups cooked quinoa. Thankfully I hadn't added it all yet and I'm hoping the recipe can be salvaged.\u00a0

@shaunarae Awesome! The nutrition info is on my blog, just follow the links above. I got a few different results so be sure to calculate using your preferred calorie calculator to reflect the flax eggs and your ingredients.

@shaunarae Hmmm I'm not sure. I'm inclined to say subbing the equivalent of 4 flax eggs + a bit extra soy milk should work, but I didn't test it out. You may end up with something a bit more dense. If you try, please report back! I would love to know if it works :)
