Eat for Your Eyes

We have all heard that if we want to improve our vision we should eat carrots. While the vitamin A found in carrots may help prevent macular degeneration, they are really not going to improve your vision. However there are two reports on ways to eat for your eyes.


New research indicates that eating carbohydrates, high on the glycemic index, is associated with macular degeneration, an incurable degenerative eye disease that is a leading cause of blindness in older adults. Foods high on the glycemic index are generally simple carbs that are broken down quickly and raise blood glucose levels. Ever poplar items like white bread, sweets like cookies and cake, and beverages sweetened with corn syrup are loaded with simple carbs. Although glucose (aka a simple sugar) is fuel for cells, too much of it can be destructive. Researchers are not sure of the exact process that leads to the degeneration, but they theorize high glucose concentrations are harmful to the retina and the capillaries that supply the eyes. Researchers also felt that a diet of high glycemic index foods cause oxidative stress that increases inflammation in the capillaries.

Known for its anti-inflammatory properties, omega-3 fatty acid may help prevent blindness since it worked in a recent and complicated study performed on mice.

So eat for your eyes - cut down on the simple carbs and eat more omega-3s. Not sure what foods are high in this fatty acid? You can find omega-3s in cold water fish like salmon and not so fishy sources of omega-3s.
