Healthier No Bake Cookies

Ingredients

* 1 ripe banana, mashed well
* 1 cup sugar
* 1/4 cup cocoa powder
* 1/2 cup nonfat milk
* 1/2 cup peanut butter
* pinch of salt
* 1 tsp. pure vanilla extract
* 3 cups instant oats

Directions

  1. Place all ingredients except the vanilla and oats in a medium saucepan and bring to a boil over medium heat – stirring often.
  2. Let the mixture boil for one minute, remove from heat and let the mixture cool for one minute.
  3. Add the vanilla and oats and stir well to combine.
  4. Drop by teaspoonfuls onto waxed paper and cool to room temperature.

AliyahAz and anybody else whose cookies didn't harden: no bakes are super finicky. You have to heat the mixture up and start timing it as soon as it reaches a boil and make sure to boil for a full minute... and then you have to add the oats and drop them very fast before the chocolate cooks more or hardens. If they crumble, you boiled it too long, and if the mixture never hardens, you didn't boil it long enough. You have to boil it just long enough to get enough moisture out for them to harden!

Amanda14623035 it was a HEALTHIER version to cookies - not labeled as healthy cookies. it has a lot less sugar then normal cookies. how stupid is your comment... jeez. Sugar's not exactly unhealthy either in moderation people need to get over this whole fear of sugar! Try unrefined sugars too, they are better for us than standard white sugars. At the end of the day sugar is just a form of energy if you worried about the weight then get off you're bum and move more. Calories is a way of measuring the energy in food just as joules is the measurement for electricity. Its just a case of caring for your health and burning equal to or more calories than you consume. Our bodies need calories to function. Stop fearing them, just as our bodies need a certain amount of fat to be consumed to function.

Made these today and I wouldn't really call them "cookies". A bit disappointed that they didn't harden into something crunchy. Nonetheless... they were pretty yum! Great alternative for when you feel like something sweet and soft/sticky like cheesecake and mudcake

Anonymous - I know some people prefer splenda, but I truly believe that using less of the real stuff is better for our bodies in the long run. I mean no sugar just sounds too good to be true. I'm more concerned about the long term effects of chemically produced foods in our bodies. Just my two cents. :)

I know these cookies might not considered healthy to some, but they're definitely a healthier alternative to the original version that calls for 1 stick of butter, whole milk and 2 cups of sugar. I wouldn't suggest eating them everyday, but they're great as a treat for the holiday season. :)
