These Eggnog Overnight Oats Are a Dairy-Free Holiday Delight

When you're as obsessed with Christmas and healthy living as I am, it feels like a joyful, miraculous moment of serendipity when those worlds collide. One of those moments? A healthy holiday goody that doesn't feel like a compromise or a sacrifice: these spiced, decadent "eggnog" overnight oats.

When I got some almond nog delivered to me, I immediately wanted to experiment with it and make recipes as opposed to drinking it straight from the carton (well . . . I did that, too). These oats use the standard 1:1 oats-to-almond-milk overnight oats ratio, but I swapped nog for the plain milk, and added a little extra holiday spice (bring on the nutmeg, amirite?)

The result? A lightened-up, dairy-free breakfast that tastes like Christmas morning. And you can take it to your office! It's a breakfast miracle.

Almond Nog Overnight Oats

INGREDIENTS

    • 1/2 cup almond nog (this recipe used Almond Breeze Almondmilk Nog)
    • 1/2 cup oats
    • 1 tablespoon chia seeds
    • 1/2 teaspoon vanilla extract
    • 1/4 teaspoon cinnamon
    • 1/2 teaspoon nutmeg

    INSTRUCTIONS

    1. Mix or shake all ingredients together in a mason jar or similar container.

    2. Refrigerate overnight.

    3. Enjoy with an extra sprinkling of nutmeg for garnish and sliced almonds or berries.
