Hearty Vegetarian Chili


For the chili:
1 tablespoon olive oil
1/2 cup diced onion
1/2 cup diced green pepper
One bag Morningstar Farm crumbles (meat substitute)
One 14.5-ounce can diced tomatoes
One 14.5-ounce can dark red kidney beans, slightly drained
2 tablespoons chili powder
1 tablespoon oregano
1 tablespoon cocoa powder
1 tablespoon cumin
1/2 teaspoon salt
1 dash hot sauce (Texas Pete's or similar)

For serving (optional):
Tortilla chips
Shredded cheese
Sour cream


  1. Heat olive oil in a large pot. Saute onion and green pepper until soft. Add remaining ingredients and combine well. Heat until bubbly, then simmer for 30 minutes.
  2. If desired, serve with tortilla chips, shredded cheese and sour cream.

Makes 4-6 servings.

Is it ok without the veggie crumbles? I have never tried making chili with just beans, but i don't like eating meat and my boyfriend doesn't like eating meat substitutes, so i think i am stuck with just the beans! Anyone know if this still tastes OK?

I make veggie chili all the time too - one onion (sauteed), one sweet potato, one can of black beans, one can of kidney beans, one large can of diced tomatos & one packet of chili seasoning. It's yummy! I generally double the recipe & freeze it!
