Hearty Vegetarian Chili


For the chili:
1 tablespoon olive oil
1/2 cup diced onion
1/2 cup diced green pepper
One bag Morningstar Farm crumbles (meat substitute)
One 14.5-ounce can diced tomatoes
One 14.5-ounce can dark red kidney beans, slightly drained
2 tablespoons chili powder
1 tablespoon oregano
1 tablespoon cocoa powder
1 tablespoon cumin
1/2 teaspoon salt
1 dash hot sauce (Texas Pete's or similar)

For serving (optional):
Tortilla chips
Shredded cheese
Sour cream


To adjust this recipe for a crockpot, combine all ingredients, omitting olive oil. Stir well and cook on low for at least six hours. For larger crock pots, double the recipe and cook on low for at least eight hours.

  1. Heat olive oil in a large pot. Saute onion and green pepper until soft. Add remaining ingredients and combine well. Heat until bubbly, then simmer for 30 minutes.
  2. If desired, serve with tortilla chips, shredded cheese and sour cream.

Makes 4-6 servings.
