This is a great slideshow! This is all really sound advice, most of which I try to put into practice. I hadn't thought of using meat as a spice, great advice! I'm going to check out the recommended cookbook.

The meat as spice idea reminds me of something I read in Lynne Rosetto Kasper's "How to Eat Supper" book. It was a quote that went something like: If meat is used at all, use it as a condiment.
