Ever heard of kasha? Maybe you know it as buckwheat groats. Kasha is quick to cook (it only takes 15 minutes!), full of essential amino acids and vitamins, and has a really unique nutty flavor. One cup of cooked kasha has 155 cals, 5.7 g protein, 4.5 g fiber, 1 g fat, and 1.3 mg iron. Good stuff right there! To cook kasha, combine one part kasha to two parts water and simmer for 15 minutes. This morning I swapped kasha for my regular bowl of oatmeal.

Combine 1 cup of cooked kasha, 1 Splenda packet, a few dashes of cinnamon, half an apple (first diced and microwaved for 1 minute), and a spoonful of Walden Farm's Apple Butter. Stir the ingredients together and microwave the bowl for about 1 minute. Top with cold milk and a dash more of cinnamon.
In case you're wondering about the apple butter I used, it's from a company called Walden Farms, which makes products with 0 cals, 0 fat, 0 carbs, 0 gluten, and uses Splenda instead of sugar. Love!
