Trying to stop yourself from piling a plate high with a stack of fresh flapjacks can be hard. Take temptation out of the picture by just cooking up a single fluffy cake. In under 10 minutes, you can have a satisfying, 350-calorie breakfast treat with more than 37 grams of protein.

The sky-high protein content comes from the combination of low-fat cottage cheese and vanilla protein powder. This recipe is a creative way to use protein powder you normally toss into a shake. Keep reading to learn what goes into this simple protein pancake.

Ingredients

  1. 1/2 cup quick oats, dry
  2. 1/2 cup low-fat cottage cheese
  3. 3 egg whites
  4. 1 tablespoon brown rice protein powder, vanilla
  5. Nonstick cooking spray
  6. Fresh blueberries, optional
  7. 2 teaspoons maple syrup, optional

Directions

  1. Combine quick oats, cottage cheese, egg whites, and protein powder in a blender. Mix well until it resembles traditional pancake batter.
  2. Heat a large pan over low heat, and lightly coat with nonstick cooking spray. Pour in all the batter to the center of the pan. Let it cook for approximately 3 minutes until the sides easily lift. Flip pancake and cook for an additional two minutes.
  3. Serve with fresh fruit, maple syrup, or the topping of your choice.

This protein pancake is literally THE BOMB! Regularly protein pancakes just taste like gross protein powder and have an awful spongy texture that I just can't stand, but these are great! Sometimes I add in some mashed banana and throw in a tablespoon of flax seed :) ** If your looking for a natural sweet sauce, take some frozen blueberries and put them in the microwave for about a minute give a quick stir and pour over top of your pancake! **
