What’s better than a steaming bowl of oats? One with pumpkin, of course. Here is my easy recipe for pumpkin oats, you can make it with steel cut or old fashioned, either would be fine it just depends on how long you can wait.
Makes 2 servings
1/2 cup steel cut oats (or 1 cup old fashioned oats)
2 cups water
1/4 cup pureed pumpkin (use canned or fresh)
2 tablespoons golden flax seeds
1/4 cup raisins
1/4 cup craisins
1/4 cup chopped pecans
1/2 tsp pumpkin pie spice (or to taste)
Pumpkin seeds for topping
Place all ingredients, except pumpkin seeds, in a medium sauce pot over medium high heat and bring to a boil. Reduce heat and simmer, stirring occasionally, until oats are done: about 20 minutes for steel cut oats and around five for old fashioned. Top with pumpkin seeds and serve with milk (regular or non-dairy), if desired. The combination of the pumpkin and dried fruits makes it sweet enough that you don’t really need to add a sweetener, but if you’d like, try adding some maple syrup as an all-natural sweetener.
