Ingredients (makes 8-10 fritters):
4 ears of fresh corn, shucked, and cleaned
1 jalapeno, seeded, diced, and divided
1 medium onion, minced
4 cloves of garlic, minced
4 tbsp fresh cilantro, washed, chopped, and divided
1/2 cup whole wheat flour
2 eggs, lightly beaten
1/2 cup whole wheat breadcrumbs
1 tbsp black pepper
3 tbsp extra virgin olive oil
1 medium avocado, pitted, and diced
1/2 lime, juiced
Sriracha sauce (optional)
