This flavorful stir-fry is a great natural way to make your veggies taste delicious!

Sweet and Spicy Orange Glazed Veggies:
1 bunch of asparagus, cut into 3 inch sections
1 red bell pepper, sliced
5 shiitake mushrooms, sliced
1 yellow onion, sliced
2 carrots, chopped
1 leek, chopped
3 large oranges
1 tablespoon freshly grated ginger
2 teaspoons honey
2 teaspoons cinnamon
1 teaspoon cayenne powder
2 garlic cloves, crushed
2 tablespoons olive oil
Cut oranges in half and squeeze thoroughly to juice, or just use a juicer if you have one. Pour orange juice into a bowl. Repeat with lime. Squeeze the juice from the grated ginger into the bowl so you get the flavor, but not the ginger itself. Add honey, cayenne, cinnamon and garlic. Mix ingredients together and pour into a sauce pan. Place on medium high heat. Allow to simmer until glaze has reduced to a thick consistency.
While the glaze is simmering, chop up the asparagus, mushrooms, carrots, leek onion, bell pepper. Pour olive oil into a large skillet or wok and turn heat to medium high. Add onions to skillet. As soon as the onions begin to turn clear, add the rest of the vegetables. Stir until all vegetables are well mixed in the pan. Add a half cup of water to the skillet and continue to stir regularly. Once water is evaporated remove the vegetables from heat.
When vegetables have been removed from heat and the glaze has reached the desired consistency, pour glaze over vegetables and stir until evenly covered.
Serve over brown rice or quinoa.
