A Reader Recipe: Whole Wheat Blueberry Muffins

  • 1 C whole wheat flour
  • 1 C all-purpose flour
  • 3/4 C sugar
  • 1 T baking powder
  • 1/2 t salt
  • 1/2 t cinnamon
  • 1 egg
  • 3/4 C skim milk
  • 1/4 C Greek yogurt (plain or vanilla)
  • 1/4 C unsweetened applesauce
  • 1 C frozen blueberries

Stir together all of the dry ingredients. In a separate bowl whisk together the wet ingredients. Stir the wet ingredients into the dry, and then fold in the blueberries. Bake at 400 degrees for 20 minutes. Makes 18 muffins.

Try it with other berries, stir in nuts or oatmeal — the possibilities are endless!
