One of the best ways to preserve wine is to invest in a vacuum sealer, which will ensure that all the air is out of bottle before putting it in the fridge. That extends the life of the opened wine from a few days to about a week. And My Hubs trick when he wants to cook with wine but doesn't want to open a whole bottle of wine is to buy a four pack of the small splits and use one of those. He always keeps them on hand just in case.

I will usually use my "old" wine (open for more than a week) as cooking wine. This has proved great for adding something new to old recipes
