Avocado Makes Its Way to Dessert

Everyone knows I am crazy for popsicles — there's no better way to beat the heat on a Summer day. Although avocado is generally used in savory dishes like guacamole, it is a fruit and therefore is perfect for dessert!

These avocado coconut creamsicles are surprisingly delicious and decadent. The avocado, coconut milk, and cream freeze to an exceptionally smooth texture. Because the nutty flavor is incredibly rich and exceptionally filling, a little goes a long way, and next time, I will use a smaller popsicle mold. If you are tempted to experiment with avocados in this frozen treat, keep reading for the recipe.

Avocado Coconut Popsicle

Ingredients

1 large avocado
1/4 cup coconut milk
1/4 cup cream
1/4 cup sugar
pinch of salt

Directions

  1. Using a hand mixer, blend all of the ingredients until creamy.
  2. Fill popsicle molds with the avocado mixture and place in the freezer for at least 5 hours.
  3. Enjoy the popsicles.

Makes 4-6 popsicles, depending on your mold.

i made an avocado pie one- avocado, lime and sugar basically. tasted just like key lime, super delicious. will def try out these pops!

I think this would taste pretty good. Where I live (a country somewhere in Asia), avocado is considered a fruit. We usually eat it as is, or with milk and sugar. I also love avocado ice cream and milkshakes. That's why I can't wrap my head around guacamole.

Hmmm. My husband is a guacamole freak and he also loves popsicles of just about any kind. I might have to make these for him to at least try. They look very interesting and probably yummy.

Growing up in Southeast Asia, avocado was always used as dessert. I grew up drinking cold, creamy avocado smoothie with chocolate syrup and sweet condensed milk LOL, that's like so good during our LONG summer. In fact, avocado is my mom's fave dessert. And avocado ice cream (even popsicles) is everywhere, I was so surprised that avocado is used in a dish instead of dessert when I got to US :) And so far I've not yet gotten used to the idea of avocado as part of a dish.

I love avocado, but bleh I recently tried making crema de avocado -- chilled avocado soup -- and found it rather revolting. Most of it went down the drain. I have a feeling the popsicles would join them.

This would be so good. I live in the Middle East and there are juice stalls everywhere, they make and avo shake with milk, powdered milk, avo, honey and ice all blended and it is amazing (you can use some spices in it if you like too). Also, I have had avocado icecream and it is one of my favorites.
