Ingredients

4 really ripe, black-spotted bananas, peeled
6 cups flour
2 1/2 cups sugar
1 1/2 teaspoons salt
3 teaspoons baking soda
13 ounces butter, melted and cooled, plus more for greasing
3 eggs
3 tablespoons water
1 1/2 cups walnuts, divided

Directions

  1. Preheat oven to 350ºF. Grease two 8 x 4 inch loaf pans with butter. Mash bananas with a fork. In a large mixing bowl, stir together flour, sugar, salt, and baking soda. Stir in bananas, butter, eggs, water, and 1 cup of walnuts until well combined.
  2. Divide batter between each greased loaf pan and top each with remaining walnuts. Bake for 45 minutes or until toothpick test comes out clean. Cool slightly before turning out onto a cooling rack.
