4 More Riffs on the Caprese Salad

I've already introduced you to my favorite trendy update of the classic Caprese, Italy's tried-and-true trifecta of tomatoes, mozzarella, and basil. But given all the fresh offerings out there right now (grape and cherry tomatoes! Brandywines! Green Zebras! Cherokee Purples!), sometimes you just need a bit more tomato-salad variety.

These combinations, like the Caprese, don't call for more than a few ingredients. Many of them take inspiration from other traditional flavor combinations around the world. To see a few more simple tomato salad ideas, keep reading.

  1. Parmesan fricos and arugula. Beautiful tuiles made of baked, shredded Parmesan cheese make for a delightful textural contrast against heirloom tomatoes. Try tossing bits of the stuff with arugula and topping with a Champagne vinaigrette for a simpler version of this salad.
  2. Crema Mexicana, cotija cheese, and cilantro. Go south of the border with a cream- and cheese-drizzled topping of crema; crumbly, tangy Mexican cheese; and fresh cilantro leaves.
  3. Grilled halloumi, lemon, and cumin. Throw some slices of Cypriot halloumi cheese on the grill, then drizzle giant Beefsteak tomatoes and finished halloumi pieces with lemon juice and olive oil, and lightly dust with cumin.
  4. Soft tofu, soy sauce, and shiso. Master one of David Chang's most acclaimed dishes: an Asian twist on the Caprese with Japanese shiso leaves, delicate soft tofu, and a marinade of soy sauce, sesame oil, and sherry vinegar.
