Definition: Caramelization



Caramelization
A cooking process in which sugar is heated until it oxidizes, liquefies, and becomes a syrup. The end result is nutty in flavor and golden brown in color. Occurs in fruits and vegetables that have natural sugars. (Picture at left is of caramelized onions.)
