Ingredients

1 1/2 pounds carrots
A few sprigs of fresh thyme
Extra-virgin olive oil
Sea salt
Freshly cracked black pepper

Directions

  1. Heat a large saucepan over low heat. Fill a tea kettle with water; heat until boiling. Meanwhile, trim the carrots and slice them using the thick slicing disc in a food processor. Add to the saucepan with a glug of extra-virgin olive oil, a good pinch of salt and pepper, and a few thyme leaves. Barely cover with boiling water, then cover with a lid, and turn the heat to high. Cook for 15 minutes or until tender. Drain the carrots, and return them to the pan. Smash with a fork until roughly mashed, then season them to taste.
