Ingredients

4 tangerines, zested
1 cup olive oil
1 heaping tablespoon shallot, diced
1 tablespoon champagne vinegar
Salt and pepper, to taste
3 cups arugula
1 1/2 cups golden beets, roasted and chopped
1/4 red onion, sliced paper-thin

Directions

  1. To make vinaigrette: Add tangerine zest to olive oil. Let infuse overnight, and then strain.
  2. In a small bowl, whisk together shallot, 3 tablespoons tangerine-infused olive oil, and vinegar. Salt and pepper to taste, and set aside.
  3. To combine salad: In a large salad bowl, combine arugula, beets, and red onion. Pour vinaigrette on top, and toss to combine.

Ingredients

1 jar pepperoncinis
3 jars Cat Cora's olives
8 ounces pepper manchego
1 cured salami, sliced
1 fennel salami, sliced
1 package sesame crackers
Fresh herbs like rosemary and thyme, for garnish

Directions

  1. On a large serving platter, arrange all of the ingredients to your liking. Garnish with fresh herbs.

Bruschetta 3 Ways

Ingredients

For roasted red pepper sauce:
1 7-ounce jar roasted sweet red peppers, drained and chopped
2 teaspoons capers, drained
2 teaspoons lemon juice
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons basil, cut in a chiffonade
1 tablespoon Oxymelo Vinegar and Thyme Honey or balsamic vinegar
2 tablespoons asiago cheese, sliced thin

For feta, kalamata, and mint topping:
2 tablespoons feta cheese, crumbled
1 tablespoon lemon juice
1 teaspoon red pepper flakes
1/4 cup kalamata olives, diced
1 1/2 teaspoons olive oil
1 teaspoon mint, cut in a chiffonade

For bruschetta:
1 baguette, sliced into 1/2-inch pieces on the diagonal
Olive oil, for drizzling
3 cloves garlic
4 tomatoes, seeded and diced
10 basil leaves, cut into a chiffonade

Directions

  1. To make roasted red pepper sauce: In a small bowl, mix peppers, capers, lemon juice, salt, pepper, and basil. Top with vinegar. When serving, top with a thin slice of asiago cheese.
  2. To make feta topping: In a small bowl, mix feta, lemon juice, red pepper flakes, kalamata olives, olive oil, and mint together.
  3. To make bruschetta: Slice the baguette into pieces on a diagonal. Drizzle with olive oil, and then grill on medium heat until golden brown. When bread comes off the grill, rub each side with a garlic clove.
  4. Let guests spoon the sauce of their choice onto baguette pieces. For a classic bruschetta, top each piece of baguette with a spoonful of tomato, a pinch of basil, a drizzle of olive oil, and a small pinch of salt.

Ingredients

2 cups ice
1 cup peach puree, homemade (blend 3 peeled and pitted peaches on high until smooth) or store-bought
1 orange, sliced thin
1 lemon, sliced thin
2 limes, sliced thin
2 peaches, pits removed and cut into wedges
1/2 cup brandy
2 bottles white wine, such as Pinot Grigio
1 cup orange juice, optional

Directions

  1. Fill a large pitcher with ice, peach puree, orange slices, lemon slices, lime slices, and peach wedges. Pour in brandy and white wine. Stir everything together.

2 mint sprigs
1 apple, sliced thin
1/2 cup blackberries
10 green grapes
4 strawberries, sliced thin
4 apricots, pits removed and cut into wedges
1 cup white grape juice
1/2 lemon, sliced thin
1/2 lime, sliced thin
2 bottles sparkling water
2 cups ice (optional)

Directions

  1. Fill a large pitcher with mint, apple slices, blackberries, grapes, strawberry slices, apricot wedges, grape juice, lemon slices, and lime slices. Fill with sparkling water. Top with ice if desired.
