Chicken Salad With Berries and Balsamic Vinaigrette

A Summer-Ready, Berry-Loaded Chicken Salad

Along with the heat, Summer brings delicious produce. My go-to salad during this time of year is one full of fresh berries and veggies. This salad is delicious because it has goat cheese, walnuts, fresh berries, and a refreshing balsamic-agave vinaigrette. I also find that it's so easy to pull together for BBQs and picnics, and it is a perfect workday lunch. 

Berry Chicken Salad With Balsamic Agave Vinaigrette

Serves 2

Ingredients
For the salad:
3 cups fresh Spring mix (I used Organic Girl)
1/2 cup sliced strawberries
1/2 cup blueberries
1/2 cup raspberries
1 pound cooked boneless, skinless chicken breast (I grilled mine in a panini press)
1/4 cup chopped walnut halves
2 tablespoons goat cheese

For the vinaigrette:
1/4 cup balsamic vinegar
2 tablespoons agave
1 tablespoon Dijon mustard

Directions

  1. Add the Spring mix to the plates. Layer the berries, chicken, walnuts, and goat cheese on top.
  2. In a small mixing bowl, whisk the balsamic vinegar, agave, and Dijon mustard together. Drizzle 1 to 2 tablespoons of dressing on top of each salad.
