Definition: Chicory

Not to be mistaken for its cousin, endive, chicory is a vegetable with curly bitter tasting leaves that are used as an ingredient in a salad or cooked as greens. The ground, roasted roots are often used as a coffee substitute or added to coffee for more body and aroma.
