Is There Any Dish That Intimidates You in the Kitchen?

We all have our culinary fears. Mine revolve around temperamental dessert recipes that require precision and the right environment to work. Case in point: I am completely intimidated by chocolate soufflés (yet I've promised myself to attack this fear head on in the coming weeks). Once, I also had a horrific experience with a batch of marshmallows, which I don't think I'll ever forget. So I'm wondering, what are the recipes or techniques that intimidate you in the kitchen? @millarci Hmmm maybe there is something in the specific recipes you're using that you can adjust to better fit your taste buds. What kind of dishes specifically have you tried to make?

My biggest fear is being asked to bake something sweet. People assume that since I'm a good savory cook that this will also be true for baking sweets. Couldn't be more untrue! And I despise having to measure things. Measuring cups and spoons make cranky.

I'm always scared to cook chicken on the stovetop (particularly boneless skinless chicken breast). I can never get it right. It's either not cook enough or completely dry. I try to only use chicken recipes that require the oven to cook it. It's a shame because there are so many great stove top chicken recipes but I can't get myself to try them. :(
