Cool Off With World Famous Key Lime Pie

A few weeks ago, Ejmemis gave me a fabulous little tip that I just had to share with everyone. Like a true Florida girl, she loves her key lime pie with a zingy, creamy filling and crumbly, buttery crust. I may not be from Florida, but I love key lime pie, especially when the weather is warm.

Miami's Joe's Stone Crab restaurant, is famous for their amazing key lime pie and luckily for all of us who don't live there, they've recently released the recipe! To get the recipe for this refreshing dessert, all you have to do is


Key Lime Pie

1 prepared 9-inch graham cracker pie crust, pre-baked according to directions, and cooled
3 large egg yolks, at room temperature
Grated zest of 2 Key limes, 1 teaspoon
1 14-ounce can sweetened condensed milk
2/3 cup fresh Key lime juice
1 cup cold heavy cream
1 tablespoon powdered sugar, or more, to taste
Thin slices of Key lime, for garnish

  1. Refrigerate baked and cooled pie shell until ready to use.
  2. Preheat oven at 350 F.
  3. In medium-size bowl, beat egg yolks and lime zest together with electric mixer on high speed until fluffy and well-aerated, about 5 minutes. Gradually add condensed milk and continue to beat until mixture is rather thick and fluffy, about 4 minutes.
  4. Lower speed and slowly add Key lime juice, mixing until just combined.
  5. Pour filling into chilled pie shell.
  6. Place pie on center oven rack and bake until set, about 10 minutes.
  7. Transfer pie to a wire rack and let cool thoroughly, then refrigerate until very cold, at least 2 hours.
  8. Freeze for 15 to 20 minutes; remove from freezer 20 minutes before serving.
  9. Before making whipped cream, chill mixing bowl and beaters for best results. Just before serving pie, beat heavy cream in mixer, add powdered sugar and continue to beat until nearly stiff, but not grainy. Do not overbeat.
  10. If serving entire pie at once, slather whipped cream over surface, then slice and serve. If serving only a few slices, garnish each with a dollop of whipped cream. Add very thin-sliced twists of fresh lime for additional garnish.

Serves 8.

Make Ahead: Unused portions can be frozen and, properly stored, Key lime pie will last several months in the freezer.

Just wanted to say thanks for the recipe because the pie was a HIT! Everyone loved it. It was dense yet creamy, tart but sweet. Perfect all the way around.

Ok I made the Key Lime pie yesterday (Saturday) and I have made a big dinner today (Sunday) for my husband. I will come back this evening and let you know how it turned out. It is so hard not to go ahead and dig into it but I have to wait for hubby to get home and let him get into it first.

OMG THANK YOU THANK YOU (I got a mention on sugar! how cool!).I have had the Joe's key lime pie, and it is AMAZING!!!that's the reason why I found this receipe and had to spread the word...I know that my plan for this weekend is try to make this and replicate all of that goodness!

I posted about this a while back on my site, but great job on getting the word about Joe's out! I grew up on Joe's (I lived about 5 minutes away...) The recipe has been out for a while, and if you haven't pick up the Joe's Stone Crab book! It's filled with history and recipes. I did have a tip about making the pie...if you're looking for a (somewhat) healthier version of it, buy a premade lowfat graham cracker crust and use lowfat or no-fat sweetened condensed milk. Oh, and if you haven't tried the Joe's Vinaigrette recipe, DO! It's so flippin' good. It's a chunky ingredient-filled recipe so you can serve this on bare lettuce or tomatoes and cucumbers. Go make it now!

Well my sister asked for dessert and my dad didn't have anything--he went online, printed out the first pie recipe he found and made it. And sure enough it was a key lime pie, something my sister and I had never had before. It took a while to cool, so we ate it at like midnight on a hot summer night watching a Disney movie. He had never made it before, and I must say I have never had a better key lime pie in my life. That is my best memory of my sister and dad, to date.
