Curd

Definition: Curd

Curd is a dairy product obtained by curdling milk with rennet or an acid such as lemon juice or vinegar, and then draining off the liquid portion. Cottage cheese is an example of a curd product.

The word curd is also used to describe a creamy spread made from juice (usually lemon), sugar, butter and egg yolks - the ingredients are cooked together until the mixture is thick (getting even thicker as it cools).

I love cheese in any form! Curds have got to be one of my favorites...though being from NY I have never had a chance to try fried ones, never even heard of them until earlier this year...when I was in Oregon with a boyfriend we went to the Tillamook factory and were able to sample a bunch of the cheeses and I introduced him to curds...so delicious!

haha...apparently we midwest residents (more specifically, wisconsin dwellers) love the cheese curds. i did my undergrad at madison and these things were my undoing; a completely new thing for a girl from washington. cheese curds are the best things on the planet!! great fresh, even better deep fried. the minnesota state fair is the best place for the fried ones - i always get a basket and wont share with my boyfriend! Mme Hart - I spent many a weekend in La Crosse (when it wasn't football season of course! can't miss the badgers) That place was fuuuuuuuuuuuuuun.

My Uncle lives in Madison, WI and whenever he comes home, he brings me curds. I think they are amazingly good ;) You can tell that they are fresh because they make a squeeking noises when you eat them. :)

As I'm reading this, I'm eating some homemade lemon curd I made on waffles. Strange.
