Mostly oil but it depends what I am making

I'll use oil to temper the pan that I'm melting butter in. The butter doesn't burn as fast that way!!

i use olive oil mostly, but use sesame oil when cooking chinese or thai food. i use a bit of margarine when i make mexican.

Olive oil or real butter. I also use lard in some of my baking. Real fat tastes better.

I mostly use olive oil, but I have canola oil spray handy too. If I'm making alfredo sauce though, butter is the only way to go.

I try to use small quantities of real butter-I will not use fake fats. I also use olive and canola oils but use as little as neede to get the job done.

The kitchens in Italian restaurants all have one thing in common. Huge gobs of butter next to the stovetop. There is a reason...butter makes everything taste better.

olive or grapeseed oil, mostly, but when I'm making omelettes, I always use butter in the pan too.

I use EVOO the majority of the time for dinners, but I use butter when needed!

I'm a huge fan of rape seed oil and olive oil but I also believe that a little bit of REALLY good quality organically made butter is good for you too. So I like to use both, but the butter more moderately than the oil!

I use both depending on what I'm making. Always unsalted butter for baking, and NEVER margarine! I agree with cageyme about learning how unhealthy margarine is, and when you read the ingredient lists it's almost disgusting! People use margarine because it says less fattening, but all those trans fats are gonna kill ya! If I'm going to use fat, I'm going to use the real thing, and oooh is it always worth it!

i usually go with whatever the recipe calls for. chicken is always good with oil, though.

When all the research started showing that margarine was just as unhealthy as butter I switched to butter. I always bake with butter, and I cook with olive oil. I use Smart Balance on toast and oatmeal and such.

I use mostly healthy oils... EVOO, grapeseed... but a fair number of times I'll use both at the same time. Oil for the higher smoke point, butter for flavor/color.

Both. I try to cook with olive oil for the most part, but when something calls for butter I will only use the real thing.
