Hubby does it for me. I had tried it and I do not like it at all. (But amen on the Peking Duck. Many a nominal vegetarian has met her fall on a Peking Duck dinner.) Eleuthera 5 years I just remembered that the classic way of preparing Peking (Beijing) Duck is that while the duck was carved tableside, only the skin was served with very little meat, if any, attached. I was introduced to this as a teen in San Francisco...and became enamored with the subtle flavors of this classic dish. You could have the duck meat, of course, and most people did, but the dish was made so that the delicate flavors of the skin might be savored.
