8/10 B'fast is my least fav meal except eggs Benedict. Those pancakes threw me cause I'm not a fan of those at all except hubby's version with fruit and nuts inside.

Oh my benedict is my absolute favorite. I love breakfast. Somehow the muffin tops and the dutch baby stumped me.

YUMMMM!!! Everything there is a favorite. I think I might be having to make me some huevos rancheros for breakfast tomorrow! Genious meal I often forget about. I had already told my honey that I was going to make some eggs benedict this weekend. One of the things I LOVE about having our own chickens - never a shortage of eggs. And the eggs benedict is a great way to eat up a dozen in a single meal. LOL. As for the benedict - never had a problem with my hollindase sauce burning. I use a double boiler, so that may make a difference. However, the KEY for me is to triple or quadruple the amount of fresh lemon juice called for! That and a healthy pinch of white pepper. I agree, over salmon is the BOMB for a benedict. The best I've ever had was a florentine with salmon. Ohhh, heaven. Though, we often make ours with straight bacon rather than canadian bacon. :D

Since when do Silver Dollar pancakes have swirls? I always think of hash browns as loose, in a pile. If I would have seen "McDonald's Hash Browns", I'd have gotten that one right!

That made me hungry... I've got THE BEST recipe for Hollandaise Sauce. Secret is to heat it in the microwave instead of on the stove. You can do shorter bursts and then you don't burn it! You can save time by putting everything into a hot dish. Tear up the toasted English Muffins and put those in the bottom, then sprinkle your cut up ham over the top of that and crack eggs over the top of the whole thing. Toss it in the oven and put the sauce on the top of each individual serving as you plate it. Saves tons of time and is great for a large group.
