Stir-Fry Asparagus in a Flash

One of the vegetables I look forward to the most in Spring is fresh asparagus. Lightly stir-fried with a touch of sesame oil, asparagus remains slightly crunchy, making a nice side dish to any meal. Look for asparagus with firm stalks and tightly closed tops. The thickness of the asparagus doesn't matter — you'll just have to cook the thicker stems a bit longer.

Stir-Fried Asparagus With Black Sesame Seeds

Ingredients:
1 bunch fresh asparagus
2 teaspoons sesame oil
Sea salt
Toasted black sesame seeds

Directions:

  1. Hold asparagus spears with one hand on each end. Snap off the base of each spear by bending asparagus to see where it naturally breaks. Cut into bite-size pieces.
  2. Heat sesame oil in a skillet over medium-high heat. Add asparagus and stir-fry until just tender, about 3 to 4 minutes. Season with salt and sprinkle with sesame seeds.
