Hump day, the middle of the week, Wednesday whatever you want to call it, is the hardest day for me to find motivation. Motivation to work, exercise, and cook. That's why I like to keep the dinners especially easy. Tonight's classic chicken Caesar salad wrap can actually be prepared in 10 minutes! How's that for a quick fix? There is no cooking involved, the chicken is store bought and the salad dressing is your favorite brand of bottled Caesar. These tangy wrapped sandwiches are perfect for a meal on the go. I know you all love a good Caesar salad, so get the recipe -
2 cups thinly sliced romaine lettuce
1 1/2 cups chicken breast from store bought chicken, cut into chunks
1 medium tomato, diced
1 can (5 ounces) sliced water chestnuts, drained
1/4 cup creamy Caesar salad dressing
1 tablespoon grated Parmesan cheese
4 (8-inch) flour tortillas, plain or flavored
- Combine lettuce, chicken, tomato, water chestnuts, salad dressing and Parmesan cheese in a medium bowl.
- Toss until well combined.
- Divide the mixture evenly among the tortillas. Wrap the tortillas around the filling, and serve.
