Ingredients

  1. 1/4 cup fresh parsley, chopped

  4. 1/2 tablespoon butter
  5. 4 boneless, skinless chicken breast halves (6 to 8 ounces each)
  6. Coarse salt and ground pepper
  7. 3 tablespoons olive oil

I wouldn't compromise the integrity of the herbs with a microwave. Stove top is always best. It looks awesome - I'm going to try it!

Seriously? A microwave recipe? If you simply halve the chicken breasts, it takes the same time to bake them. I may be one of the few who doesn't own a microwave, but I certainly don't miss it.I loved the rest of the recipe, though, and I'd probably play with the vegetables included and add some fruit. The new sweet strawberries from my neighbor would be delicious with arugula!

That sounds really good AND really easy. Even without the arugula the chicken is a great solution for dinner.
