Fast & Easy Dinner: Feta-Stuffed Pita Burgers

Who says a burger has to be served between two buns? This recipe takes the traditional notion of the cheeseburger and turns it on its head. Instead of crumbling cheese over the patties, the feta is stuffed into the middle of a ground meat mixture. A soft pita replaces the classic bun and spicy arugula stands in for the usual slice of lettuce. The resulting dish, which is full of Mediterranean flavors, would be great for impromptu weeknight entertaining. To create a meal, serve with store-bought hummus, pita chips, and kalamata olives. Fast Feta-Stuffed Pita Burger Recipe 2009-11-17 12:07:08

Ingredients

  1. 2 tablespoons cornmeal
  2. 2 tablespoons milk
  3. 1 tablespoon finely chopped onion
  4. 1 clove garlic, minced
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon dried oregano, crushed
  7. 1/8 teaspoon lemon-pepper seasoning
  8. 8 ounces lean ground lamb
  9. 8 ounces lean ground beef
  10. 1/3 cup finely crumbled feta cheese
  11. 1 tablespoon milk
  12. 1/4 teaspoon ground cumin
  13. 1/4 teaspoon ground cayenne pepper
  14. 2 large pita bread rounds
  15. 2 cups shredded fresh spinach or arugula

Directions

  1. In a medium bowl, combine cornmeal, the 2 tablespoons milk, the onion, garlic, salt, oregano, and lemon-pepper seasoning. Add ground lamb and ground beef; mix well using hands. Shape mixture into eight 1/4-inch-thick patties.
  2. For filling, in a small bowl combine feta cheese and the 1 tablespoon milk. Divide filling among four of the patties. Top with the remaining patties; press edges to seal.
  3. In a small bowl, combine cumin and cayenne pepper. Sprinkle mixture over patties.
  4. For a gas grill, preheat grill. Alternately heat a heavy pan on the stove. Reduce heat to medium. Place patties on grill rack or in pan. Cover and cook for 12 to 16 minutes or until done (160°F), turning once halfway through grilling.
  5. To serve, cut pita bread rounds in half crosswise. Serve burgers in pita halves with spinach or arugula.

Serves 4.

There you go again - I just went grocery shopping yesterday and wanted lamb burgers, but sadly no lamb. So I got all the other fixings and good ol' ground beef. Yes, I was mad about no lamb so I bought pitas for a more authentic taste. I also make a Greek yogurt, lemon juice, feta, mint, garlic, S&P dressing. I think I got the recipe from Sutter Home Burger contest a few years ago. Mighty, mighty tasty.
