Let's Dish: What's Your Favorite Pasta?

Happy Monday, and happy World Pasta Day! Celebrate by enjoying your favorite kind of pasta at home tonight. I was torn between making two dishes I'd never turn down: linguine with clams and white wine and the Roman classic cacio e pepe. But ultimately, I think I'll be settling in with a bowl of pasta carbonara. After all, there's nothing better than coating al dente bucatini with a gloss of eggs, cheese, and guanciale. What's your favorite kind of pasta?

I love making homemade pasta with a press or an extruder, and just bought ravioli molds. My favourite pasta has to be ricotta-filled tortellini with melted spread (like Smart Balance, nothing exotic) and grated Pecarino or Locatelli. Close runner ups would be herb pansotti with walnut sauce and fettuccine with leeks and wild mushrooms.

Most any pasta, but our special one is pasta fresca, farfalle with fresh tomato sauce, fresh mozzarella, basil and garlic.

Any and all pasta from the simple butter, salt and pepper and humble mac'n cheese to the more complex pasta carbonara.

My mom's pasta e fagioli. She makes it unlike any place I've ever been. A real pasta dish, not soup like. :)

Whole wheat spaghetti with homemade yogurt pesto, turkey meatballs, and sauteed veggies. Mmmmm.....

Basic, with a little butter, salt, pepper and cheese. Also anytime of gnocchi.

i won't eat any milk/cream based sauce but am otherwise flexible - i love everything from marinara, to pesto, or fromaggi, though i have a soft sport for plain old garlic and olive oil, sometimes whith chilli/anchovies. my favourite shapes are rigatoni, penne, tagliatelli, fetuccine or other ribbon and risoni (esp for soups) - i don't eat spaghetti or macaroni.

pasta in a white wine sauce with tomatoes and garlic. Although I love (almost) any pasta!

I'm not sure it's possible to outdo freshly made fettuccine with a real-deal alfredo sauce — one of those cases where simple is best!
