Ingredients

1 heart of romaine lettuce
1 pat of butter
1 tablespoon flour
1 1/4 cups organic chicken broth
A few sprigs of fresh mint
4 cups frozen peas
The juice of 1/2 a lemon
Sea salt
Freshly cracked black pepper

Directions

  1. Set a large skillet over high heat. Wash the lettuce, and slice it using the thick slicing disc in a food processor. Add the butter and flour to the pan, then pour in the chicken broth, tear in the mint leaves, and use a balloon whisk to mix it into a smooth sauce.
  2. Once simmering, add the peas and the lettuce. Add the lemon juice, and a splash of water, season with a pinch of salt and pepper, stir, then put a lid on the pan and cook for 15-20 minutes, or until the peas are tender.
  3. Serve hot, garnished with a sprig of mint.
