Ingredients

6 thick bread slices
Powdered sugar
3 eggs
Fresh blueberries
Fresh strawberries
Splash vanilla extract
Splash almond milk
1 tablespoon coconut oil
A few dashes cinnamon
Skewers
Pure maple syrup

Directions

  1. Crack eggs into bowl and whisk briefly to break yolks. Add almond milk, vanilla, and cinnamon, and combine thoroughly. Soak slices of bread in egg mixture, making sure to coat both sides.
  2. If griddle or pan isn't nonstick, heat up surface with coconut oil. Place coated bread slices onto griddle/pan, and cook until golden brown on both sides, flipping once. Remove from pan and let slices cool, then cut into bite-size pieces.
  3. Stack bread pieces on skewers with strawberries and blueberries. Dust with powdered sugar, and serve with maple syrup.
