Garam Masala
A spice blend common in Indian cooking. The word garam means warm or hot, and these dry-roasted ground spices add warmth and heat to a dish. Though the spices in the mixture vary from cook to cook, garam masala may include coriander, black pepper, cloves, cinnamon, cumin, cardamon, dried chiles, fennel, nutmeg, or mace. The blend can be found in Indian markets or at most specialty grocery stores.
