You can be sure that this Labor Day our family will be eating these grilled rainbow carrots. They're a perfect side dish to cook along with whatever else you happen to be barbecuing, whether it's a big juicy steak or a delicate salmon filet. The kids love the fun colors of the heirloom carrots, and the grown-ups love the sophisticated flavor of the garlic balsamic vinaigrette.

Grilled Garlic-Balsamic Carrots
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1/8 teaspoon salt
1 clove garlic, crushed
1 pound heirloom rainbow carrots
- Make the vinaigrette by mixing olive oil, balsamic vinegar, salt and garlic in a small bowl.
- Place carrots on a barbecue over medium heat and brush them with the balsamic vinaigrette mixture.
- Grill carrots for about 20 minutes, until tender, turning them halfway through and brushing them with the vinaigrette several times during cooking.
- Remove from grill and transfer them to a serving plate. Brush them with remaining vinaigrette before serving.
Makes approximately 4 side servings.
