Get Your Grill On For This Grilled Peach Salad

Just about anything can be thrown on the grill: grilled lettuce, grilled bananas — so why not grilled peaches? I decided to try them out in a salad.

Select peaches that are on the firm side because they will soften and caramelize while on the grill. Unless you want wilted greens, be sure to let the peaches cool before tossing them with the rest of the ingredients. This hearty salad is great with barbecued chicken or ribs. Grilled Peach Salad With Goat Cheese

Grilled Peach Salad With Goat Cheese

Ingredients

For salad:
3 peaches, pits removed and sliced in half
Olive oil, for drizzling
Salt and freshly ground black pepper
6 cups mixed greens
1/2 cup snap peas, sliced on the diagonal into 1-inch pieces
3 scallions, sliced on the diagonal into 1-inch pieces
1/4 cup, toasted slivered almonds, pistachios, or other nut of your choice
1 4-ounce package goat cheese

For vinaigrette:
2 teaspoons Dijon mustard
2 tablespoons red wine vinegar
3 tablespoons olive oil
Salt and freshly ground black pepper

Directions

  1. Heat a grill to medium heat. Place peaches on a cookie sheet and drizzle with olive oil and sprinkle with salt and pepper. Grill peaches until soft and grill marks appear, about 3-4 minutes per side. Remove and let cool.
  2. In a small jar with a lid, combine vinaigrette ingredients. Shake well to emulsify.
  3. On 6 plates, divide greens, snap peas, scallions, and nuts. Top each plate with a grilled peach half and place a dollop (or quenelle) of goat cheese in the center of each peach. Drizzle each plate with vinaigrette and serve immediately.
