The turkey experts at Butterball say a few common mistakes Americans make when roasting their turkey is using a pan that is too deep (we're talking 8 inches) and not using a roasting rack. The heat from the oven can't possibly reach the bird when there is a giant metal barrier! The ideal pan to use is around 2 1/2 inches high. But, if you are determined to use the pan you have, here's how you can fake the height difference: place a muffin tin upside down on the bottom of the pan! This simultaneously lifts the turkey up and acts as a roasting rack hack, so all that glorious hot air can circulate around the bird.
