How to Store Raw Oysters

Although raw oysters are best consumed as fresh as possible, sometimes it's necessary to store them for a couple of hours or even overnight. My dad purchased 50 oysters on Friday for a small party Saturday. Since they were on the menu raw, we had to keep them cold for about a day. Following the technique described in the Hog Island Oyster Company cookbook, this is how to properly store oysters:

  1. Stack the oysters right side up on a plate or in a baking tray.
  2. Wet a kitchen towel and ring out as much water as possible.
  3. Drape the damp towel over the oysters, covering completely.
  4. Place in the fridge on the shelf closest to the freezer. You want to keep the shellfish really cold without freezing it because this will kill the oysters. If the towel becomes to dry, rewet it with water.

Oh and we leave them unopened in the cooler on ice. We never open the oysters unless we are going to eat them. easier to store.

IF we have leftovers...which is rare, we fry them up the next day anyway!

If oysters are still unopened they will last 1-4 weeks minimum in frig.. Depends on where you get them...If shells are cracked or open or inside is dry when open throw away. Never put in closed zip lock bag or store in water. If they smell when opened throw away. You are so WRONG saying they last one day. Do not go crazy w/wet towel I do not do it.......Oh I grow the federal trademarked "Watch Hill Oyster" which is sold across the country and have been for aprox 20 yrs. Please do not misinform and scare the public..........jg

They will actually stay fresh for several days as long as you care for them right. You must place the bowl side down though. A few weeks ago I bought 50 on Thursday and we ate the last ones on Sunday. Not a bad one in the bunch.
